Oxygen sensor feedback lets the ECU correct fuelling. The immediate correction is short-term trim; the learned average is long-term trim. Reading them together tells you the direction and size of the error before you touch a component.
A strongly positive trim means the ECU is adding fuel to correct a lean condition — think unmetered air, weak fuel supply or a sensor reading low. A strongly negative trim means it is removing fuel — think a rich condition or a sensor reading high. On V-engines, splitting by bank localises the fault to one side.
